Coal Harbour’s Nightingale Restaurant
As part of the Hawksworth group, headed by renowned local chef David Hawksworth, Nightingale’s food and drink offerings have set the bar high.
The Hawksworth Group also operates Hawksworth Restaurant and Bel Cafe, alongside Nightingale, all located in the upmarket Rosewood Hotel Georgia in the heart of Downtown Vancouver. Of the three restaurants, Nightingale is a personal favourite and the trendiest.
Nightingale sits on West Hastings Street in Coal Harbour, neighbouring the 1930s Art Deco Marine Building. From the outside, the restaurant’s building is beautiful to look at. It’s in a traditional-looking heritage building, set a few steps above ground.
Inside Nightingale: Marble, Mood & Movement
Once inside the restaurant, guests are greeted by a host and often a bustling restaurant atmosphere. Even at lunchtime, the place is typically filled with people having business and leisurely lunches. In the evenings, Nightingale has a sultry atmosphere, dim lighting, and a sophisticated mood.
Inside the dining room, the most striking feature is the grand marble bar. As the centrepiece, it is bold, ornate, and well-stocked, offering a wide range of liquor and specialty bottles.
The room is airy and large with very high ceilings. Looking up, you’ll see the two-tiered dining seating design. The balcony upstairs is open when the restaurant is full. An open wooden-beam ceiling reveals the building’s original heritage, with its copper piping, giving the room a refined, slightly industrial character.

Nightingale’s Street-Side Patio
In warmer months, Nightingale operates a patio in front of the restaurant on West Hastings Street. Being inside the restaurant is much more appealing. However, on warm, sunny days, the patio is a nice place to sit outside.
Tip: Request a table in the main dining room when you make a reservation. Being in the heart of the room rather than looking down on it (if seated on the balcony above) makes a difference to the dining experience if ambience is important to you.
Grass Roots in Vancouver
As mentioned earlier, Nightingale is rooted in a Vancouver entrepreneurial success story. Chef David Hawksworth, a Vancouver local, created the Hawksworth group. His years of culinary training and expertise were used to create Nightingale. The restaurant is recognized for its seasonal cooking, thoughtful plating, and strong beverage program, earning Michelin recognition.
Nightingale’s Menu Highlights
The menu focuses on a farm-to-table approach, with fine-dining, high-end dishes. The restaurant offers comfort food that is familiar and satisfying, yet crafted with the precision and elegance you’d expect from a Michelin-recommended kitchen.
Comfort favourites like their pizzas feel like wearing pyjamas, only these pyjamas are Prada. The pizzas at Nightingale are a must-try highlight. There are many topping options, and they make pizza well.
Other standouts include the quick-seared bigeye tuna ($34) with yuzu kosho vinaigrette and scallions, and the beet salad ($18) with orange and dill. The grilled broccolini ($18) is delightful, finished with shallots and cooked perfectly, crisp with just the right bite.
Additional Favourites
From the small plates, the handmade English pea and ricotta capunti ($27) is a clear highlight. The pasta is delicately house-made, cooked to exact al dente, and coated in a sauce that feels both refined and comforting.
Larger plates don’t miss either. The beef short ribs ($55) with confit shallot, chimichurri, and spiced breadcrumb are rich and deeply satisfying, while the halibut with lemon and caper is clean, bright, and beautifully tasty.
Honestly, it’s hard to single out the best dishes as Nightingale delivers across the board. Every dish arrives thoughtfully plated, and those small design-led touches, from the ceramics to the garnishes, elevate the meal as much as the flavours.
For Dessert
Moving on to desserts, the caramel cheesecake, spiced apple, chai gel, oat crumble, and caramelized phyllo ($14) I tried was smooth, creamy, and beautifully plated. Nightingale crafts desserts as exquisitely as their main dishes, so don’t skip out on them.
Tip: Plates at the restaurant are shared style. Recommending 4 small plates paired with two mains, and even just one dessert between two, is a good amount.
The vibe at Nightingale is Sultry yet sophisticated, historical, and modern all at once.
Nightingale’s Wine, Cocktails & Drinks
Nightingale has had much recognition for its extensive wine list. For wine lovers, it can be a dream, with wines to suit every price range. The experts are there to talk you through choices and complement your dish options.
With that said, don’t overlook the cocktails. The bar staff at Nightingale are talented. From the cocktail list, the vodka-based friendship bracelets ($17) is a great sweet apertivo. After dinner, the espresso martini never goes amiss.
Tip: Dining at the bar is a good place to be seated. It’s a spacious bar top for guests who like the social vibe and bar-tender rapport.
Happy Hour at the Restaurant
Nightingale offers an appealing happy hour, making it an accessible way to enjoy one of Vancouver’s best spots. Happy hour runs every day from 3:00 pm to 5:00 pm, which is helpful because few restaurants continue their timed specials on weekends.
The restaurant’s happy-hour food offerings are mostly small plates, but you can still enjoy a full early dinner. A couple of pizzas are available at discounted prices, along with options such as buttermilk-fried chicken.
There’s generous pricing on bottles of wine and rose prosecco priced at $50 (at the time of writing). Cocktail favourites such as the Bramble, a gin-and-blackberry creation, are also available for $10.
Tip: Take advantage of the daily happy hour between 3:00 pm and 5:00 pm. It’s well worth it!

Nightingale offers a strong selection of vegetable dishes and salads, but the menu isn’t modification-friendly. Some dishes may seem vegetarian at first glance, but on closer inspection, they may include ingredients like cheese or animal-based sauces, so it’s worth checking the details before ordering.
While there are options, Nightingale is better suited to diners without strict dietary restrictions. Plates lean premium, and many dishes are built around rich sauces, dairy, or layered components, which can make it a less flexible (and more expensive) choice for restricted diets.
Pricing & Dining Details
Nightingale sits firmly in the $$$ price range, which feels justified given the Michelin recognition, chef-driven menu, and high-quality execution. Portion sizes are generous and designed for sharing. Drinks are well-poured, and the service matches the setting. Taken together, the experience is well worth the price.
Small plates generally range from $8 to $36, with lighter bites like house-marinated olives at the lower end and dishes like seared scallops at the higher end. Most dishes range from $17 to $ 29. Mains range from roughly $23 to $65, while premium proteins cost up to $279 for the largest cuts.
Reservations are easiest to make through OpenTable, though calling the restaurant also works. On weekends, there are usually one or two hosts managing arrivals. Street parking directly in front is limited due to the busy location, but there are metered spaces and nearby lots within walking distance. There is no valet service at the time of writing.

The Chef’s Table offers a front-row seat to the kitchen, with guests seated side by side as they watch the team in action. It’s a more immersive, behind-the-scenes experience with dishes served family-style and a great view of the restaurant’s energy. Pricing varies by group size, and enquiries should be directed to the restaurant.
Service & Atmosphere
Service at Nightingale is polished without feeling stiff. Staff know the menu inside out, are genuinely warm, and make guests feel well looked after, exactly what you expect at this level. The bar team is especially strong and happy to accommodate off-menu requests.
On weekends, the restaurant is typically full and buzzing, with a lively atmosphere that carries on late into the evening. The upstairs space opens and fills quickly, adding to the energy and sense that Nightingale is very much the place to be.

Nightingale works for just about everything. It’s a strong choice for romantic date nights, celebrations, business lunches or dinners, and friend catch-ups. In the evenings and on weekends, expect couples, groups celebrating milestones, and friends out for a long dinner. During happy hour, the crowd shifts to after-work meetups and casual drinks.
This restaurant is for people who genuinely appreciate great food. It’s not an average menu or experience, and it attracts diners who enjoy thoughtful details and a deliberate approach. On weekends, especially, guests tend to dress well, enhancing the overall sense of occasion.
